Onur Karaalioğlu (YÖK 100/2000 doctoral program PhD Student- ÇOMÜ School of Graduate Education, Department of Food Engineering), and his advisor Prof. Dr. Yonca Karagül Yüceer, and Prof. Dr. Dorota Kręgiel (Łódź University of Technology) achieved scientific success ('zero waste' project) which supported by Polish National Agency.

As a result of the study, some aroma substances with high concentration, which have the potential to be used industrially, were produced by using some food wastes. And in the following processes, it is aimed to carry out encapsulation processes in order to obtain higher amounts of the relevant components, to purify them and to use them as natural food additives in the industrial field.
